This wonderful cookbook ranks right up there with the classic "The Joy of Cooking." It's written in the same style as Joy, in other words sans pictures but with lots of wonderfully readable text and 200 plus recipes--taking into account the listed transformations, and it covers the material in great and important detail. The author is to be commended for her superb and successful efforts in helping pc cooks find tasty recipes and learn how to maximize their use of the pressure cooker.
She includes a list of mail-order sources, which also lists pressure cooker manufacturers as well as where one can order specialty ingredients. In regard to the latter--when I looked for a curry recipe in the section titled Curry in a Hurry, I expected to be disappointed in trying to find a source for the Patak's Mild Curry Paste that the author advocates: I live in a rinky-dink, small town where specialty ingredients are impossible to find, but I found I was able to order a good supply of it right here on Amazon.
I could go on-and-on, but since I have not yet tried any of the recipes inasmuch as the book arrived only today, I'll sign off but not without first highly recommending this extremely well-written pc cookbook.
Hot Kitchen - Hot Summer -- PRESSURE COOK! August 12, 2010 C. Gallo I've owned this book (and several others by Ms. Sass) for quite a long time. The weather this summer really motivated me to take out the pressure cooker and this wonderful, thoughtful book. I've tried the chicken (for the tarragon chicken salad), meatloaf (better than in the oven) and of course, the lemon cheesecake. (Suggestion: buy the Oxo expandable steamer basket - good and inexpensive) I joke with my family - it takes longer to wash up the pots and dishes than it takes to cook the food. I use a pressure cooker on a gas range and I am so happy not to turn on that oven. Ms. Sass covers all necessary instruction for the novice pressure cooker. After you make a few recipes, you won't be a novice for long! A very valuable resource! Thanks Ms. Sass.

Ms. Sass has written a pressure cooker cookbook that is more than a cookbook. It has recipes in it. It has troubleshooting tips in it. It has suggestions for how to cook the food in the pressure cooker.
More importantly it is a book that teaches you how to develop your own pressure cooker recipes by applying some fundamental rules for cooking various ingredients. These ingredients can be cooked in different combinations, using different "things" in the cooker to hold them such as a trivet to hold a roast or a steamer basket to hold vegetables. The pot can be used as more than just a pressure cooker, by (say) cooking rice in the pressure cooker then using the pot to finish cooking rice pudding atop the stove.
It also helps you to think "outside the box" by supplying recipes for things other than soups and stews, such as cheesecake.
I have been impressed with the book - it is well written, well organized, and created with a scholar's care.
I am not connected with Ms. Sass, have no financial interest in the book, but rather than just a satisfied reader.
