Featured Recipe: Chicken Breasts with Goat Cheese and Fire-Roasted Tomatoes

This dish is exceptionally easy to make and worth every second. That said, there is one thing to note: Be careful when checking the chicken for doneness. The tomatoes will likely drip into the chicken. If you cut into the chicken or poke it with a fork to test for doneness, be sure it’s not the liquid from the tomatoes making the chicken look pink even if it’s not.

Ingredients

  • 4 (4-ounce) trimmed boneless, skinless chicken breasts
  • Sea salt and pepper, to taste
  • Olive oil spray
  • 1/2 cup canned, drained, diced fire-roasted tomatoes or fire-roasted tomatoes with garlic
  • 2 ounces (about 1/2 cup) goat cheese crumbles
  • 2 tablespoons finely slivered fresh basil leaves, or more to taste (optional)

(Serves 4)
Hands-on Time: 7 Minutes
Hands-off Time: 5 to 9 Minutes

Directions

Preheat the oven to 350 degrees F.

Season the chicken with salt and pepper.

Place a medium ovenproof nonstick skillet over high heat. When it’s hot, lightly mist the skillet with spray and immediately add the chicken side by side to the pan so it does not touch. Cook the chicken just until it is golden brown on the outsides, 1 to 2 minutes per side.

Remove the pan from the heat and top each piece of chicken evenly with about 2 tablespoons of the tomatoes, followed by about 1/2 ounce of the cheese. Transfer the skillet to the oven and bake the chicken until it is no longer pink inside and the cheese is melted, 5 to 9 minutes. Top evenly with the basil, if desired. Serve immediately.

Makes 4 servings. Each (1 topped breast) serving has: 171 calories, 29 g protein, 2 g carbohydrates, 4 g fat, 2 g saturated fat, 72 mg cholesterol, trace fiber, 198 mg sodium

They're lighter on fat than traditional recipes, and they can be made in about twenty minutes. This is the genius behind Devin Alexander's //I Can't Believe It's Not Fattening!//. Written in a quirky conversational tone, Alexander draws the reader in with words and appealing recipes. The color images taunt with their creamy sauces and decadent glow. Yet, Alexander promises they'll help you maintain a slim waistline.

Her tricks include using quality ingredients, a little help from pre-packaged ingredients, and cutting out unnecessary calories. For instance, her potato chip recipe eliminates frying and uses heart-healthy olive oil. Her strawberry shortcake replaces buttery pound cake with store-bought egg-white healthy angel food cake.

it was ok. i dont love it, i dont hate it. I think i meant o buy her other book....sorry for poor review. dont have much else to say. it did arrive quickly and as promised.

This book is awesome!!!! I cook from it all of the time. I am SO glad that she shares the brand names and stores where she found ingredients, this is the BEST, practical, zero guilt, and GREAT TASTING cookbook ever!

Most of the recipes really are quick, some of them take a little longer than stated (because I'm not a professional cook - I'm a working wife and mommy of 2!) but even those that took me a little longer are definitely quicker than regular cookbooks. I love the advice she gives on how to stock up your pantry to set you up for success - there is other great advice in the book too. It feels so great to cook super tasty, healthy meals for my family that are heart healthy, kid healthy & waistline friendly. I can't say enough good things about the book, thank you for making it, keep more like this coming & I will keep buying - thanks!

Just can't believe how easy and yummy the food is in this book! I usually have to cook a meal for my kids, something for my husband and finally myself. This book allows me to cook one dinner that we can ALL enjoy!! Thank you Devin for giving me more time to enjoy dinner.

I love this book, all of the recipes I've tried are super quick and taste great. I highly recommend it! I've been trying to loose weight for a long time. I love to work out and one of my main problems was food. I like to eat! But this book is such a great tool for folks on the go-who want to make some good, delicious healthy meal. People always say it's a lifestyle choice to loose weight and this book definitely HELPS to CREATE that lifestyle
