Angel Loaf Cake

Angel loaf cake for all.


1 cup cake flour
1 1/2 cup Sugar Twin or Sprinkle Sweet
12 egg whites
1 1/2 tsp cream of tartar
1 tsp vanilla extract
1/4 tsp salt


Preheat oven to 350F.

In a small bowl, combine cake flour and 3/4 C Sugar Twin. Mix well using a wire whisk

Place egg whites in a very large mixing bowl.

Beat egg whites with an electric mixer on High until foamy.

Add cream of tartar, vanilla extract, and salt.

Continue beating until stiff peaks form.

Add remaining 3/4 cup sugar Twin, 2 tsp at a time, while continuing to beat egg whites.

Add the flour mixture, 1/2 cup at a time, folding in with spatula or wire whisk.

Pour batter into an ungreased 9x13 in. metal cake pan.

Bake for 25-30 minutes or until cake springs back when lightly touched.

Do not overbake.

Place cake pan on a wire rack and allow to cool.

Cut into 12 servings.

Serve with fresh berries or a dab of Cool Whip.
