Golden Chicken with Fresh Mangoes and Raisins

Glazed chicken with the sweet-sour flavour of fresh mango and raisins. A favourite dish that you can serve frequently.


1 whole chicken
1 litre mango juice
250 ml chicken stock
50 ml olive oil
250 ml raisins
2 fresh mangoes, peeled and cut into 2 cm cubes
Salt and ground black pepper to taste


1. Rinse chicken, cut out the oil gland and place it with breast section down in a heavy-based saucepan.

2. Add mango juice, chicken stock, honey, olive oil and raisins and simmer for 20 minutes.

3. Meanwhile preheat oven to 180 °C. Grease an ovendish.

4. Place the cooked chicken with the breast side down in an ovendish.

5. Baste with a little olive oil, season with salt and pepper and add sauce in which it was boiled.

6. Bake uncovered for 10 minutes, turn over so that breast part faces upwards, baste with sauce and bake until just before the chicken turns golden brown.

7. Add the mango cubes and bake until golden brown.

8. Serve with brown and wild rice.
