Green and Red Pepper Lo Mein

This is an easy to make lo mein that served cold.


3 quarts water
4 oz lo mein noodles
1 clove garlic, fresh minced
1 tsp ginger root, fresh minced
2 tbsp soy sauce
4 tsp sesame seed oil
1 tbsp hoisin sauce
1 oz rice vinegar
4 oz romaine lettuce, shredded
1 oz fresh scallions, minced
3 oz fresh green peppers, julienne
3 oz fresh red peppers, julienne
2 oz fresh celery julienne
Salt to taste


1. In stock pot, bring water to a boil, add salt, then add noodles.

2. Cook 3-4 minutes until tender, drain and cool.

3. Combine soy sauce, oil, garlic, ginger, vinegar and hoisin sauce for dressing. mix until well blended.

4. Pour the dressing over noodles and toss to coat evenly.

5. Add green pepper, red pepper, celery, romaine and scallions. toss gently.

6. Refrigerate until ready to serve.
