Here are 85 recipes for cheeses and other dairy products that require basic cheese making techniques and the freshest of ingredients, offering the satisfaction of turning out a coveted delicacy. Among the step-by-step tested recipes for cheese varieties are farmhouse cheddar, gouda, fromage blanc, queso blanco, marscarpone, ricotta, and 30-minute mozzarella. Recipes for dairy products include crème fraíche, sour cream, yogurt, keifer, buttermilk, and clotted cream. There are also 60 recipes for cooking with cheese, including such treats as Ricotta Pancakes with Banana Pecan Syrup, Cream Cheese Muffins, Broiled Pears and Vermont Shepherd Cheese, Prosciutto and Cheese Calzones, and Grilled Vegetable Stacks with Roasted Red Pepper Sauce. Profiles of home cheese makers and artisan cheese makers scattered throughout the text share the stories of people who love to make and eat good cheese. 5 out of 5 stars The greatest cheese book!!   July 25, 2010
Shannon L. Sigman (San Jose, ca United States)
This book is awesome. It has all kinds of cheese from easy cheese to hard. It is very detailed. I have many cheese books and this is a must for your cookbook repertoire. I use it all the time. It is also nice that you can e-mail the author with question. The ingredient list is available on her website except milk but you can also buy from other supplier. I have a few books that are written so you have to buy from them only, no this one.

Just learning to make cheese- this book seems to have all the answers I have been looking for. Still working on soft cheeses but looking forward to getting supplies for all those great hard cheeses included in this book.

This book was the only one chosen for sale in the well known cheese supply store in Seattle. The owners praised it. I was pleased to find it at a lower price on Amazon! Easy to read format and easy to follow directions. Very informative.
